This delicious dressing makes a wonderful salad, try it with rocket, red onion, crispy fried pancetta and shaved parmesan cheese. This is the dressing Varapodio uses on our warm chicken salad. Simple chop up chicken thigh fillets throw into a hot pan with a drizzle of dressing. While the chicken is cooking make up your salad with all the bits you love, like dressed lettuce, tomato, cucumber, red onion, sundried tomatoes, grilled capsicum sundried tomatoes & of course Varapodio olives. Toss the chicken a couple of times till cooked & place on salad. Drizzle on to Pumpkin before roasting
